Cantillon is cool and I believe it was only cash, we bought a bottle and some nice glasses but i don't remember the prices. The dollar really sucks against the euro anyway so everything is a bit pricey. We also used the Good Beer Guide and it is very helpful, I believe it lists some bottle shops. As for bars we went to Delirium which is crowded and noisy but a great beer selection. There are also some gueuze and faro bars listed in the book that we hit but again I don't remember the names, I will look when I get home. My wife drank lambics almost exclusively the whole time we were in Belgium. If you can I strongly recommend hitting the town of Brugge and then spending a lot of time at 't Brugs Beertje. Actually Brugge itself is really cool! Bamberg was an incredible town (home of Weyermann) with great smoked beers and kellerbier. In Munich I would hit Augustiner Brewery. Sit at one of the long tables, enjoy a pretzel or two and order some wonderful German food. March is the Strong Beer Fest in Munich, so if you hit any of the breweries (Augustiner, Paulaner, etc) they will have wonderful doppelbocks on tap!
